Healthy chocolate popsicles? Yes please! I found this recipe for Vegan Fudgsicles and knew I had to try it.
While I followed the recipe, we didn’t have large popsicle molds so I believe they were more compact which in turn gave a different texture. However, everyone still really enjoyed them and the smaller molds made them better for small children! Going vegan every once in awhile feels good too!

Vegan Fudgsicles with Strawberries
1 cup chocolate soy milk
1/4 cup raw, unsalted cashews
8 strawberries, sliced
- Place all the ingredients except for the strawberries in a blender and mix until smooth.
- Fill popsicle molds three-quarters full with the chocolate mixture. Add a tablespoon or so of sliced strawberries to each mold and fill with remaining chocolate mix.
- Place the sticks in the molds and freeze for several hours or until completely frozen.
