I just finished making the best stir fry I have ever made and it only took about 15 minutes…. and there was KALE in it. I have been hearing about kale and its benefits (read the Top 10 Health benefits here ) for months now but I hadn’t tried it until yesterday when I put it in a smoothie. I was trying to use the food I already have rather than spending money buying more groceries. I wish I could have put even more healthy ingredients in it, but I did what I could with what I had and it was delicious.
Steak and Kale Stir Fry
3 cuts of peppercorn tenderized steak
1 Cup of Kale
1/4 Cup Water
1 Tomato Chopped
2 Garlic Cloves Minced
2 Cups of Whole Grain Rice
1 tsp of Butter
Heat a frying pan with a bit of butter over medium heat. Mix the Garlic with the Soy Sauce and water, heat in the pan and then add the steak. Once the meat is no longer pink, add the kale and tomatoes. Reduce heat to a simmer and keep basting it with the liquid until the kale is soft. In the meantime, cook your rice. Put the rice in a bowl and add the contents of the frying pan on top.
As you can see, the ingredients are very simple. You do not need to use pepper or salt because of the amount of salt in the soy sauce and the pepper on the peppercorn steak. If I had onions, bell peppers etc. I would have added them as well however sometimes we just have to work with what we have!
