One Pot Cauliflower, Carrot & Apple Soup Recipe

This soup is absolutely delicious, is easy to make, and has an endless list of variations that you can experiment with, depending on your personal preferences.  I kept this recipe very simple, due to the fact that it was originally made for my nine-month-old Son and that comes with a few limitations, (such as no salt and nothing too spicy).  However, I ended up grabbing a bowl (or two..) for myself.

Easy One-Pot Cauliflower, Carrot & Apple Soup

Ingredients

1 Medium Onion, Chopped

3 Garlic Cloves, minced

3/4 Cauliflower head, cut into florets

3-4 Large Carrots, Washed, Peeled, Sliced

1-2 Apples, Washed, Sliced (Peel if you desire)

Pinch of Cumin

2 Tbsp Olive Oil

1 Tbsp Unsalted Butter

1/4 Cup Grated Cheese of your choice

Pepper to taste

Instructions

Sauté the garlic and onions in olive oil, with a bit of pepper, in a crockpot or large pot while you prepare the other ingredients.

Once soft, add the cauliflower, carrots, and apples to the pot and add just enough water to cover them.

Bring the pot to a boil, then reduce the heat and allow it to simmer until everything is soft; about 15-20 minutes.  While it simmers, add the cheese and butter.

With a food processor, blender, or handheld immersion blender, CAREFULLY *always be careful while blending hot liquids, or wait for it to cool*, blend until there are no large chunks.  While blending, add just a pinch of cumin.  Serve warm with pepper.

As mentioned, I made this recipe to be baby-friendly, but you can add other spices to make it spicier or milk/cream to make it thicker.
