Cheesy Cauliflower Bread Recipe

I am completely in love with Cheesy Bread but I also know that I need to start making healthier choices when it comes to what I eat.   This is why I am trying to re-create versions of the food I love, but with healthier alternatives.  I kept seeing recipes for Cheesy Cauliflower Bread online so I thought I would give it a try.  I was pleasantly surprised by how much I enjoyed it, but I also learned a few things for when I make it next time.

Cheesy Cauliflower Bread

Ingredients

1 large head cauliflower
2 large eggs
2 cloves garlic, minced
1/2 tsp dried oregano
3 cups shredded mozzarella
1/2 cup grated Parmesan
Salt
Freshly ground black pepper
Pinch of crushed red pepper flakes
2 tsp Freshly Chopped Parsley
Marinara/Favorite Sauce, for dipping

Instructions

1) Preheat the oven to 425º.

2) Line a baking sheet with parchment paper. Wash the cauliflower.  Cut the cauliflower into florets and then using a grater or in a food processor, grate the cauliflower.  *I don’t have a food processor so I used a grater and it took quite awhile but it was still manageable.

At this stage, there are a number of things you can do to the cauliflower,  like steam or cook it.  I wanted to see what would happen if I skipped this step but I did try to get as much liquid out of the cauliflower as possible.  This step is extremely important.  If you skip this step, the crust will be too soggy and it won’t hold the way you would want it to.  I also want to try adding seasoned breadcrumbs to the crust to see how that would help bind the crust.

2) Transfer cauliflower to a large bowl with eggs, garlic, oregano, 1 cup mozzarella, Parmesan, and season with salt and pepper. Stir until completely combined.  Also, if you wish to use other cheese- go ahead!  I added marble cheddar to mine and it tasted amazing.  You can never have enough cheese.

3) Transfer dough to prepared baking sheet and pat into a crust. Bake until golden and dried out, 25 minutes.
Sprinkle with remaining cheese, crushed red pepper flakes, and parsley and bake until cheese is melted, 5 to 10 minutes more.  If you’re a meat lover, you can also add bacon before putting it back in the oven.

4) Slice and serve with sauce on the side.
