Chicken and Avocado Caprese Salad Recipe

I am currently going through a massive salad phase. If I could eat it for every meal, I would gladly do so. Today’s salad is brought to you by a recipe I have made in the past but had forgotten about. Therefore, I’ll give credit to SkinnyMs. for reminding me of how much I love eating this. Simply mix a few (of my favorite) Caprese ingredients with some chicken and ta-da! You get this Chicken and Avocado Caprese Salad.

You can experiment with the ingredients to make it your own. For example, if you have a chicken recipe that is delicious, make it and use any leftovers to use in the salad. You can add several different ingredients to this if you want it to hold you over for longer, but don’t underestimate the power of its ingredients! You may get fuller than you’d think possible in no time.

Chicken and Avocado Caprese Salad

Ingredients

1 pound chicken breast grilled or baked, sliced, chilled

1/2 cup mozzarella balls mini

1 cup cherry tomatoes halved

2 tablespoons basil leaves fresh

4 cups arugula

Basil Balsamic Vinaigrette

3 tablespoons olive oil extra virgin

2 tablespoons balsamic vinegar

1/2 teaspoon honey

1 tablespoon basil chopped

1 garlic clove minced

Instructions

Whisk together dressing ingredients.

Arrange the chicken, mozzarella balls, cherry tomatoes, and basil over a bed of arugula in 4 separate bowls.

Drizzle balsamic dressing on top.

Enjoy!
