Chicken, Brussels Sprout & Mushroom Pasta Recipe

Even though I have really grown to enjoy Brussels sprouts, they’re still not one of the first things I write on our grocery list. Having them every now and then is better than never, right? When I saw that they were on sale this week, it inspired this Chicken, Brussels Sprout & Mushroom Pasta.

I saw a similar recipe on EatingWell but the reviews for the recipe weren’t too promising. After reading it through, I could understand why. This is a reminder that while cooking is always a learning experience for me, it’s also a great opportunity to learn how to trust your instincts!

According to Cleveland Clinic, mushrooms offer:

  • Selenium: Helps your body make antioxidants to prevent cell damage.
  • Vitamin B6: Supports your nervous system and helps form red blood cells.
  • Riboflavin, niacin, and pantothenic acid: Help carry out several metabolic reactions and are involved in the production of energy
  • Potassium: Identified in the 2020 Dietary Guidelines for Americans as an underconsumed nutrient. Helps muscles contract, assists with fluid balance and maintains normal blood pressure
  • Zinc: Supports your immune system and healthy growth in babies and children.

While Brussels Sprouts are “rich in vitamin K, which is necessary for blood clotting and bone health. They’re also high in vitamin C, an antioxidant that helps promote iron absorption and is involved in tissue repair and immune function”. – Healthline

With only 4 steps, this recipe is simple and also offers comforting ingredients (hello, Boursin Cheese!). It’s a great mix of proteins, greens, and the noodles that I love.

Chicken, Brussels Sprout & Mushroom Pasta

Ingredients

  • 8 oz Whole-Grain Linguine (Or preferred noodle)
  • 1 pound Boneless, Skinless Chicken Thighs
  • 4 cups Mushrooms, sliced
  • 2 cups Brussels Sprouts, sliced
  • 1 Medium Onion, chopped
  • 4 Garlic Cloves, thinly sliced
  • 2 Tbsps Boursin Cheese
  • 1 ¼ tsps Dried Thyme
  • ¾ tsp Dried Rosemary
  • ¾ tsp Salt
  • 4 cups Water
  • 2 Tbsps Fresh Chives, chopped

Directions

  1. Prepare pasta according to instructions.
  2. Add the chicken, mushrooms, Brussels sprouts, onion, garlic, Boursin cheese, thyme, and rosemary in a large pot. Place over medium, to medium-high heat.
  3. Once the chicken is cooked through and the cheese has fully melted (about 7-10 minutes), add the pasta to the pot. Stir well until everything is coated with the cheese.
  4. Remove from heat and let stand, stirring occasionally, for 5 minutes. Serve sprinkled with chives.
