Chicken with Sweet Potato Curry Recipe

This Chicken with Sweet Potato Curry recipe, inspired by the 400 Thai & Chinese Delicious Recipes For Healthy Living cookbook, combines quite a few of my favorite ingredients. With lean protein and my favorite root vegetable, it made for the perfect dish to enjoy on a cooler, “it’s almost Summer” evening. This takes less time to cook than I thought it would and the resulting dish is delicious.

It tastes very close to a meal that is served at one of our local Indian restaurants! The next time I make it, I will most likely replace the chicken with chickpeas to see how a vegetarian-friendly version tastes. I will also be sure to have naan bread on hand because that was the only thing missing this time around.

Chicken with Sweet Potato Curry

Ingredients

3 Tbsp Indian Curry Powder
1 Tbsp Ground Turmeric
1 1/4 lb Skinless Boneless Chicken Thighs or Breast Fillets
1 1/2 Tbsp Raw Cane Sugar
2 Tbsp Sesame Oil
2 Shallots, chopped
2 Garlic Cloves, chopped
1 1/2-inch Ginger, peeled and chopped
2 tsp Dried Chilli Flakes or Chilli Paste
2 Medium Sweet Potatoes, peeled and cubed
3 Tbsp
2 1/2 cups Coconut Milk
Small bunch each of Fresh Basil and Cilantro, stalks removed
Salt and Pepper

Instructions

In a small bowl, mix the curry powder and turmeric. Place the chicken in a separate bowl and coat with half of the spice mix; set aside.

Heat the sugar in a small pan with 1.5 tsp water, until the sugar dissolves and the syrup turns golden. Remove from the heat and set aside.

In a heated heavy pan or wok, add the oil and stir-fry the shallots, ginger, and garlic. Stir in the rest of the turmeric, curry powder, and chili paste/flakes. Add the chicken and stir-fry for up to 3 minutes.

Add the sweet potatoes, syrup, coconut milk, and 2/3 cup water. Mix thoroughly to combine the flavors. Bring to a boil and reduce the heat, cooking for about 15 minutes until the chicken is cooked through.

Season and stir in half of the basil and coriander.

Serve and garnish with remaining herbs.
