Creamy Chipotle Shrimp Recipe

If you love shrimp as much as I do, you probably keep an eye out for new ways to incorporate them into your meals. I have yet to make a shrimp recipe that I haven’t liked! They are easy to make, can be used in both appetizers and main dishes, and are delicious. This Creamy Chipotle Shrimp recipe is a little bit different for me; I rarely make anything chipotle. With this being said, I was craving shrimp but I also wanted to try another new recipe. And, here we are!

Originally posted on Downshiftology, this recipe is simple and so tasty! It definitely hit the spot for me and I hope it does the same for you. If you are sensitive to spice, making your own chipotle sauce is easy to do and you can then tweak the recipe as needed to have a more subtle heat.

Creamy Chipotle Shrimp

Ingredients

3 tablespoons Olive Oil, divided

1lb. Shrimp

1 Red Bell Pepper, seeds removed and roughly chopped

3 Garlic Cloves, minced

3 Green Onions, sliced with green and white parts separated

Salt and Pepper, to taste

1 batch of Homemade Chipotle Sauce, (or store-bought to simplify things)

1/2 cup Coconut Milk

Garnish: Chopped Cilantro and Sliced Jalapeno Peppers

Instructions

Heat 2 tablespoons of olive oil in a saute pan on medium heat. Add the shrimp and saute for 3-4 minutes, or until the shrimp are cooked through and opaque. Remove them from the heat and into a bowl.

In the same pan, add another tablespoon of olive oil and add the bell pepper. Saute for 4-5 minutes.

Add the garlic, white parts of the green onion, salt, and pepper. Stir for another 2 minutes.

Pour in the chipotle sauce and milk; stir to combine. Add the shrimp back to the pan to warm through.

Garnish with the green parts of the green onion, chopped cilantro, and sliced jalapeno pepper. Serve on top of rice or pasta if so desired.

To store, place it in an airtight container for up to 4 days in the fridge. To store for up to 3 months, pour it into a freezer-safe container or bag and place it in the freezer. Then, when you’re ready to eat it, let it thaw in the fridge overnight. Re-heat it on the stovetop or microwave.
