Creamy Potato Leek Soup Recipe

I’m warning you now; you should double, triple, or quadruple the ingredients for this Creamy Potato Leek Soup recipe. It is so delicious that we ate the entire pot in one sitting and were left wanting more.

I’ve used leeks before, but I never thought about whether or not they would be a good addition to my diet. Since they’re in the same family as onion/garlic, I just assumed they were more healthy than not. I was surprised to find out that leek soup offers a few beauty benefits, too!

Since I’m trying to be mindful of my weight and what I eat (mostly), I’m glad that I made the amount that I did. However, the day after we had this for dinner, I wished I had some left for lunch. It’s genuinely so good.

Creamy but still light, 5 ingredients but still flavourful, this soup by Carleigh Bodrug will soon be one of your favorite soup recipes.

Creamy Potato Leek Soup

Ingredients

2 Leeks, dark green ends discarded, rinsed clean, sliced

2 Garlic Cloves, peeled and minced

4 cups Vegetable Broth

4 Yukon Gold Potatoes, peeled and chopped

1/2 tsp Dried Thyme

1 tsp Nutritional yeast, optional

Instructions

  1. In a large pot, add a Tbsp of the vegetable broth. Add the leeks and garlic, and saute for about 10 minutes until they have softened.
  2. Add the rest of the vegetable broth and the potatoes, along with the rest of the ingredients.
  3. Bring to a boil, then let it simmer on low for about 20 minutes. If the potatoes aren’t soft, allow them to simmer a few minutes longer.
  4. Remove from heat and safely use an immersion blender to puree until smooth. If you don’t have an immersion blender, a regular blender will work. Either way, be careful- it will be hot!
  5. Garnish, and serve.
