Easy Chicken and Noodle Stir-Fry Recipe

I love stir-fry recipes. Not only are they easy to make, but they are perfect if you have a few ingredients that need to be used a.s.a.p. I dislike food waste, so whenever I have a few ingredients on the brink of being past their “best by” date, I try to put them all together to create a new dish!

Easy Chicken and Noodle Stir-Fry

Ingredients

  • 1 lb (450g) skinless, boneless chicken breast, cut into strips
  • 1 tablespoon olive oil
  • 3 garlic cloves, finely minced
  • 1 medium carrot, julienned or shredded
  • 8 ounces (225g) of spaghetti noodles
  • 3 cups broccoli florets, rinsed, (slightly chop, if needed)
  • Chopped scallion, for garnish
  • Toasted sesame seeds, for garnish

Sauce

  • 1/2 teaspoon freshly grated ginger (ground ginger works if you’re out of fresh)
  • 1 tablespoon brown sugar or honey, (I use a mixture of both- let’s live a little!)
  • 1/4 cup (60ml) low-sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 2 teaspoons sesame oil
  • 1/4 teaspoon crushed red pepper flakes, optional
  • Pepper

Directions

1. Cook the spaghetti according to package directions. Add the broccoli florets for the last 5 minutes of cooking and let them cook with the pasta until tender.

2. As the pasta cooks, whisk together the sauce ingredients in a small bowl. Drain the noodles and broccoli; set aside.

3. Season chicken strips to taste with salt and pepper. Add olive oil to a medium-sized skillet and cook chicken in an even layer over medium heat, turning from time to time for 2 or 3 minutes, until slightly golden. Stir in the garlic, and carrots and cook for a minute more, until cooked through but not overdone.

4. Transfer the cooked spaghetti and broccoli to the skillet and pour the sauce on top. Toss until everything is well-coated. Garnish with scallion and toasted sesame seeds.

Many bloggers see posts like these and delete them. I have kept most of mine as reminders of how much I have learned; both in cooking, and owning a website.
