Juicy Chicken Thighs Recipe

If you make chicken frequently, it may feel like you need a fancy recipe to make it interesting every so often. Other times, you just want something simple and tasty. For the moments when all you want is a delicious chicken dish, this juicy chicken thighs recipe is perfect.

While this recipe does turn out better if you marinate the chicken for a couple of hours or overnight, I understand this isn’t always possible. Even 10-20 minutes of marinating time is better than none at all! I tend to prepare the dish and allow it to marinate while I do a quick kitchen reset and the oven preheats. In either case, you’ll be left with chicken that leaves you wanting more.

Juicy Chicken Thighs

Ingredients

  • 6 Skin-On Chicken Thighs
  • 1/4 cup Olive or Avocado Oil
  • 3 Tbsps Soy Sauce
  • 2 Tbsps Lemon Juice
  • 2 Tbsps Honey
  • 4 Garlic Cloves, minced
  • 1 Tablespoon Smoked Paprika,
  • 1 Tsp each Ground Cumin, Dried Oregano
  • Salt and Black Pepper, to taste
  • Fresh Parsley/Cilantro, chopped for garnish, if desired
  • Cayenne Pepper, Red Pepper Flakes, or Hot Sauce can also be added to the marinade if you enjoy spicier foods

Instructions

In a bowl, whisk together the olive oil, soy sauce, lemon juice, honey, minced garlic, smoked paprika, ground cumin, oregano, salt, and black pepper.

Place the chicken thighs in a shallow dish, or a large resealable plastic bag, if you prefer. Coat the chicken well with the marinade. Cover/seal the chicken, place it in the refrigerator, and marinate for as long as possible. (2 hours minimum would be ideal, but overnight is great for food prep too).

Preheat oven to 400°F and line a baking sheet with foil, parchment paper, or a reusable oven-safe mat for easy cleanup. Place the chicken thighs skin-side up on the prepared baking sheet. Roast for about 35 minutes*, or until the skin is golden and crisp, ensuring the meat is cooked through (165°F / 74°C).

*If you use boneless, skinless chicken thighs, reduce this time by 5-10 minutes. After cooking, let the chicken thighs rest for about 5 minutes.

Serve with rice, salad, or vegetables, and garnish with fresh chopped parsley or cilantro for a pop of color.
