Potato and Spinach Cream Soup

Spring weather always makes me want to eat more greens. However, I’m not ready to say goodbye to heart-warming soups, either. The solution? This light spinach & potato cream soup. You get the benefits of two cups of spinach, while also indulging in a nice cream base. That sounds like a win-win to me.

“Potato? Cream? I thought you said it was light?”

By looking at the ingredients, it doesn’t seem like it would be a light soup. However, there is so much liquid, that once you blend the potato and spinach, you’ll forget all about being wary. You can always add more broth/water if you aren’t pleased with the consistency, but we doubt you’ll feel the need to.

Ingredients

2 tbsp. extra-virgin olive oil

1-2 onion, chopped

1 bunch green onions, chopped

2-4 cloves garlic, minced

2 russet potatos, peeled and cubed

1 lb. spinach

4-6 c. low-sodium chicken or vegetable broth

Freshly ground black pepper

Heavy cream

1 lemon or lime, juiced, if desired

Shredded coconut, if desired

Instructions

  1. Heat oil in large pot over medium heat. Add onion and green onions and cook until softened. Stir in garlic, add potato, spinach and broth. Cook, stirring occasionally, until potatoes are tender.
  2. Remove from heat and use an immersion blender until all of the ingredients are blended and smooth.
  3. Taste, and season with salt, and pepper.
  4. Add heavy cream for extra creaminess & aesthetic if desired.
  5. Season with salt & pepper if needed.
  6. To add a bit more flavor, you can also add roasted shredded coconut.

This is a great recipe because of how flexible it is. You can change the ratio of ingredients, and add extra ingredients depending on your taste. It’s perfect to serve with ginger & lemon chicken, avocado, and rice on the side… I’m going to stop before I list off everything that can pair well with this.
