Salmon with Avocado Sauce Recipe

Salmon with Avocado Sauce- a recipe I have wanted to try for some time!

If you’ve followed me for a while, you probably know how much I love salmon. While I am trying to learn about responsible fishing practices and healthy alternatives, I still enjoy eating salmon every now and then. Basically, whenever it’s on sale for a reasonable price.

Today, I am combining my love for avocados and my love for Salmon to create a healthy dish. Inspired by the recipe from Kitchen Swagger, it’s both filling and nutritious. If you have leftovers, keep them refrigerated. This tastes amazing cold too! Truly; I almost ate all of the leftovers right out of the fridge, they’re that good. You can also use leftovers in a salad or a wrap- there are plenty of options!

Salmon with Avocado Sauce

Ingredients

Salmon Filets

(The amount depends on your desired number of servings. I used 750g which is good for roughly 3-4 people.)

2 Tablespoons Avocado Oil (Or Olive Oil)

Salt and Pepper

Lemon Juice/Wedges for serving

Avocado Sauce

1 ripe avocado, halved, seeded, and peeled
1/4 cup fresh basil leaves
2-3 cloves of garlic (I love garlic so use as little or as much as you want)
Half a lemon, juice squeezed, (if you’re out of lemons, don’t worry. I was too! I use ReaLemon instead. Or, anything citrus- lime, orange, you get the idea.)
1/4 cup olive oil
1/4 cup light cream or half & half (Don’t have either? You can use a replacement.)
Salt and pepper to taste

Instructions

Using a blender, blend creamy avocado sauce ingredients until smooth. If the sauce is too thick you can add a bit of water.

Season salmon with salt and pepper. If you bought salmon with the skin on, you can leave it on- it’s up to you and your preferences. Coat the bottom of a skillet with avocado oil, over medium-high heat.

Once the oil is hot, add salmon and sear for about 5-6 minutes. Flip and sear for an additional 5-6 minutes. The amount of time depends on how thick your filet is. Mine was unusually thick (not complaining in the slightest) so it took a tiny bit longer. Keep an eye on yours and be the judge on how long your filet will need. Transfer salmon fillets to a plate and top with creamy avocado sauce. With your choice of side, like salad or rice, you’ll be feeling happy and healthy by the time your plate is empty.
