This recipe is brought to you by a person who finished work and had to see what ingredients they had to work with. (That person was me, in case that wasn’t quite clear). Thankfully, our freezer had a few bags of Traditions shrimp and surimi balls that we had yet to try. With the other ingredients in our pantry and fridge, I was able to make this easy, delicious Shrimp Surimi Ball Soup.
It takes barely any time to prep all of the ingredients and most of the cooking is done as the dishes are getting washed. The resulting soup is full of delicious shrimp flavor and a bit of a spicy kick. (The ingredients can be altered so there is little to no heat, of course). I will make this again and I am excited to see what else Traditions has to offer.
Shrimp Surimi Ball Soup
Ingredients
650g Traditions Shrimp and Surimi Balls
1 Tbsp Sesame Oil
3 Large Carrots, sliced into quarters or chopped
1 Onion, chopped
1 Red Pepper, diced
3-4 Cloves of Garlic, diced
1 can Coconut Milk
1 Tbsp Thai Red Curry
3-4 cups of Water, as needed*
1-2 Tbsps Chicken Bovril*
1-2 cups Mushrooms, sliced or diced
Optional: 2 tsp Fish Sauce, 2 tsp Lee Kum Kee Chili Oil, handful(s) of spinach
*Water and Bovril can be replaced by 4-6 cups of a low-sodium broth of your choice.
Instructions
First, chop, slice, or dice all of the vegetables. Meanwhile, heat a tablespoon of sesame oil in a large pot over medium heat. Add the vegetables once the oil has heated.
Then, add the Thai Red Curry and stir well until everything is nicely coated. Cook the vegetables for about 3 minutes until they are a bit soft and they are coated with the Thai red curry. Proceed to add the coconut milk and the cups of water as needed.
Raise the temperature to high until it reaches a light boil. Add the Chicken Bovril (or broth of your choice), a dash of fish sauce, and sesame oil. Add in the Surimi balls; allow them to boil in the broth until they are cooked through. Lastly, if using spinach, add it in last and allow the soup to cook for only a bit longer.
Serve with a dash of pepper and a bit of chili oil.
