Cheesy Stuffed Roasted Tomatoes with Bacon

This easy recipe uses leftover pork from the delicious Gordon Ramsay Sandwiches Recipe and takes only 20 minutes to prepare.  If you love cheese, tomatoes, and bacon, you must try these!  I’m always looking for recipes to play with that have stuffed roasted tomatoes, so if you know any, please share them with me in the comments!

Cheesy Stuffed Roasted Tomatoes with Bacon

Ingredients

(per serving)

Tomatoes

Leftover Pork Mixture

(If you froze your leftover pork mixture, take it out in advance and thaw.)

2 Strips of Bacon

Mozzarella Cheese

Olive Oil

Salt & Pepper to season

Instructions

Preheat your oven to 350ºF.

Cut your tomatoes in halves, and using a spoon, remove the inside of each half, and put it into a bowl.

On a baking sheet, place some aluminum foil for an easy clean-up and put the tomatoes, hollowed insides facing up.   Drizzle a bit of olive oil over the tomatoes and season with salt & pepper.  Depending on how many servings you’re making, and if there is room on the pan, put the strips of bacon.  Place it in the oven and keep your eyes on it until the bacon is fully cooked.

In the meantime, cook the leftover pork mixture in a pan over medium-low heat until it is no longer pink and is thoroughly cooked.

If you want to add heat, add chopped Jalapeno Peppers, or Habanero Peppers like these ones that I got from Lufa Farms in Montreal.

Once the tomatoes and bacon are roasted to your liking, remove them from the oven.  Scoop the cooked pork into each tomato.  Place the bacon and a slice of mozzarella on top.  (Next time, I’ll be crumbling the bacon to have it easily spread out).

Place them back in the oven under the broiler until the cheese has melted.

Serve with a dash of pepper.

      Oh, it is VERY difficult for me to not have bacon in every meal I make… and I used to be a vegetarian!
      I just wish it wasn’t so expensive. Waiting for it to go on sale can be tough! 😉
