Thai Chicken with Butternut Squash Recipe

If you’ve seen my latest recipes, you can probably tell that I am in full-force Autumn mode. This Thai Chicken with Butternut Squash is perfect for this weather, but delicious enough to have year-round.

I love the Summer and I am not a fan of the Winter months. However, the one upside to the cooler Autumn weather is being able to make heart-warming and tummy-satisfying dishes such as this. Basically, give me enough butternut squash to last through the winter, and I’d be a very happy lady.

This recipe from Scrummy Lane offers a bit of both seasons, with thanks to Summerly Thai spice and Autumn-ready Butternut Squash.

Thai Chicken with Butternut Squash

Ingredients

1lb. Butternut Squash, peeled and chopped into cubes

1 tsp each Chili Powder and Curry Powder

1 tsp Turmeric

6 Cloves Garlic, finely chopped

2 in. Fresh Ginger, peeled and chopped finely

2 lbs. Chicken Thighs, chopped into small pieces

14 oz. Coconut Milk

3 Tbsp Peanut Butter (Crunchy or Smooth)

3 Tbsp Thai Red Curry Paste

1 Tbsp Honey

28oz Tomatoes, chopped 

Rice

Optional

  • Fresh coriander / cilantro,
  • Crushed peanuts
  • Natural (Greek) yogurt

Instructions 

Toss the butternut squash in a large bowl with the chili powder, curry powder, and turmeric. Set aside.

Heat up a big drizzle of oil in a large cast iron pan or saucepan, then cook the garlic and ginger together for a couple of minutes.

Add the chicken and cook for another two minutes or until white.

Add the coconut milk, then stir in the peanut butter, Thai curry paste and honey.

Then, add the tomatoes and butternut squash* and spices.

*You can use a masher or spoon to mash the squash a bit. This will help to thicken the dish if you find it to be a bit too liquid-y.

Simmer for about 30 minutes. It will be done when the chicken is cooked through, and the squash is tender.

Serve over rice. Garnish with fresh coriander/cilantro, crushed peanuts & natural yogurt, if desired.
