Vegan Fudgsicles with Strawberries

Healthy chocolate popsicles?  Yes, please!  I found this recipe for Vegan Fudgsicles and knew I had to try it.

While I followed the recipe, we didn’t have large popsicle molds so I believe they were more compact which in turn gave a different texture.  However, everyone still really enjoyed them and the smaller molds made them better for small children!  Going vegan every once in a while feels good too!

As always, be wary of any possible food allergies.

Vegan Fudgsicles with Strawberries

Ingredients

1 cup chocolate soy milk
1/4 cup raw, unsalted cashews
1 banana
8 strawberries, sliced

Instructions

  1. Place all the ingredients except for the strawberries in a blender and mix until smooth.
  2. Fill popsicle molds three-quarters full with the chocolate mixture. Add a tablespoon or so of sliced strawberries to each mold and fill with the remaining chocolate mix.
  3. Place the sticks in the molds and freeze for several hours or until completely frozen.
