The BEST Sandwich Recipe

The BEST (Bacon, Egg, Spinach & Tomato) Sandwich is one of my favorite things to make because it is so delicious. Ā Add Chipotle Aioli and your favorite cheese and trust me, you’ll want to make this all the time.

BEST Sandwich 2

Ingredients

(Per Sandwich)

4 Bacon Strips

1 Egg

4 Baby Spinach Leaves

3 or 4 Slices of Thinly sliced Tomatoes

Chipotle Aioli Spread/Dip

2 Slices Whole Wheat Bread

Square of your favorite Cheese, I used Monterey Jack with Jalapenos

Salt & Pepper

Instructions

Over medium low heat, cook your bacon until your desired crispiness.

Meanwhile, prepare your spinach leaves, and slice your cheese and tomatoes. Ā Season the tomatoes with Salt and Pepper.

When done, put your bacon to the side.

Remove most of the bacon grease from the pan, return the pan to the oven and add a bit of butter. Ā When melted, add your egg, season with salt and pepper and cover. Ā Leave on heat until it is cooking to your desired consistency. Ā I like mine just a little bit runny, so I allow mine to cook for quite some time.

While your egg cooks, toast your bread and spread the Aioli on both slices.

Layer the cheese, tomatoes, bacon and spinach on top of the bread. Ā Once your egg is done, add it to the sandwich and ta-da! Ā Serve with a side of breakfast potatoes.

You can also, assemble the sandwich and heat it in the pan- this will melt the cheese nicely but it’s up to you. Ā Several people don’t enjoy the taste of warm spinach so it depends on what you like.

I love, love, love this sandwich and will have to go make myself one now that I wrote about it- it tastes that good.
