I’ve said it many times- trout is a great fish option that doesn’t require several extra seasonings in order to taste delicious. (It’s also a great substitute when salmon isn’t on sale). This recipe inspired by one found in The Healthy Kitchen: Recipes for a Better Life, Body and Spirit is a simple broiled trout with a strongly flavored (low-fat) sauce that complements rather than overpowers the dish.
Having a salad on the side, such as my favorite Mandarin Salad offers a refreshing reprieve from the spicy tang provided by the mustard. With this being said, I recommend using less than half a cup of the Dijon mustard if this is your first time making the recipe. The taste isn’t for everyone and using too much can become overpowering. Taste as you go and see what suits your preferences!
Broiled Trout with Mustard Sauce
Ingredients
4 Trout Fillets (about 6 ounces each) or 1 Large Portion of Trout, divided
1 Lemon, cut in half
Salt and Black Pepper to taste
Sauce
1/2 cup (or less) Dijon Mustard*
1 tsp Extra Virgin Olive Oil
3 Tbsp Fresh Dill, chopped or 1 Tbsp Dried Dill
1 handful Fresh Basil, chopped (I tried tubed Ferme Trudeau Farms Basil for the first time as we had just finished our fresh basil leaves; it was quite convenient and delicious!)
*Start with less if you want to play it safe- it can be quite overpowering if too much is used.
Instructions
Preheat grill or broiler.
Pat the filets until mostly dry. Squeeze the juice from 1/2 lemon over the fillets, then season them with salt and pepper.
Whisk together the mustard, olive oil, and dill in a small bowl. Add the basil and the juice from the other 1/2 lemon; mix well.
Grill the fish on high heat or broil until desired doneness, but do not overcook. Spoon the sauce over the fish and serve immediately with your favorite salad or rice dish.
