Irish Tea Cake Recipe

This Irish Tea Cake from Let’s Dish Recipes uses ingredients already found in most pantries. I haven’t exactly been the most successful baker, but the goal to be one has not been left behind in 2022.

Along with learning Finnish (Thank you, Duolingo), I am making it a goal to bake at least 12 new desserts this year. The idea was to make one new dessert per month but to give myself some grace (and in order to not get completely tired of making desserts) I’ll simply make 12 desserts throughout the year.

Hopefully, by giving myself this goal, I won’t feel pressured into baking to meet a “quota with a deadline”. Instead, I’m hoping to create memories of baking whenever the feeling strikes. While the Finnish part of me is pleased with learning the language, I hope the Irish part of my heritage feels recognized by my making an Irish Tea Cake.

Now, due to my pantry cleanout, I was left with quite a surprise.

Halfway through making the recipe, I discovered that I no longer had flour. Which is pretty important when making any type of cake. I’m sure that you can picture me standing there in disbelief upon discovering we no longer had flour. My Kitchenaid mixer was in the middle of step 1, and I was left to figure out a way to attempt to complete step 2.

I looked through our cupboards and tried to think of what I could use as a flour replacement. I don’t know why I continued to go through my cupboards as though flour would magically appear. However, I did stumble upon milled flaxseed. Now, I have yet to use flaxseed in any recipes. I bought it with the intent to incorporate it into meals or smoothies… tonight was apparently the night it would be used.

It actually ended up turning out okay. However, would it taste like it had been made with flour? No; obviously not. In any case, this was a good experiment and I’m glad I tried it. The “cake” is delicious, but it is incredibly sweet. I suppose my sweet tooth has stopped being as “sweet” as it once was! However, this would taste amazing with tea so I suppose it was somewhat successful.

Irish Tea Cake

Ingredients

1/2 cup butter, softened
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
Powdered sugar for dusting
Fresh berries and whipped cream, for topping (optional)

Instructions

Preheat oven to 350 degrees. Grease and flour a 9-inch round pan.

In a medium bowl, cream together the butter and sugar with an electric mixer until light and fluffy. Beat in the eggs, one at a time, mixing until fully incorporated. Stir in the vanilla.

In another medium bowl, combine the flour, baking powder, and salt. Stir into the batter alternately with the milk, starting and ending with the flour mixture.

Spread the batter evenly into the prepared pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Leave it in the pan, and place it on a wire rack for about 15 minutes. Transfer it to a serving plate and right before serving, dust it with powdered sugar. Top with sliced berries and whipped cream if desired.
