One Pot Potato and Chicken Casserole

One Pot Potato and Chicken Casserole

I love One Pot Meals; they’re so easy to make and involve much less time devoted to cleaning up afterwards.  I was going to make a dinner consisting of chicken, potatoes and veggies.  Instead of making everything separately, I decided to make the casserole to speed things up a bit.

I would add a bit of chicken broth to the ingredients next time to keep it a bit more moist, but other than that, it tasted great.  If you’re not a fan of spicy food, the hot sauce is completely optional.

Ingredients

1 lb boneless chicken breasts, cubed
6 Russet potatoes, cubed
⅓ c olive oil
½ tsp black pepper
1 Tbsp paprika
2 Tbsp garlic salt (or Garlic Powder, but add 1 Tbsp Salt)
2 Tbsp Sriracha sauce or Hot Sauce (can be omitted)
2 c shredded marble cheese
1 c crumbled bacon
1 c diced green onion

Instructions

Preheat oven to 400º F and spray a baking dish/dutch oven with cooking spray.

In a large bowl, mix together the olive oil, salt, pepper, paprika, garlic salt, and hot sauce if you desire an added kick of heat.  Add the cubed potatoes and chicken and stir to coat.  Scoop the mixture into the dutch oven.

Bake the potatoes and chicken for 55-60 minutes, stirring every 20 minutes, until cooked through, crispy, and browned on the outside. *When you reach the last 15 minutes, put in the Green Bean Bacon Bundles, recipe below.*

While the potatoes are cooking, fry your bacon, set aside and once cooled, dice into small pieces.Once the potatoes and chicken are fully cooked, remove from the oven.Top the cooked potatoes with the the cheese, bacon, and green onion.

Return the casserole to the oven and bake for 5 minutes or until cheese is melted.
Serve with sour cream if desired.

 

 

Green Bean Bacon Bundles

Ingredients

1 (12 ounce) package bacon, strips cut in half
1 (16 ounce) package frozen cut green beans
2 tablespoons brown sugar (optional)
salt and pepper to taste

Instructions

Preheat oven to 400F.

On a baking sheet, lay out a half strip of bacon. place a small bunch of green beans (6 or 7) onto the strip of bacon and roll up into a bundle. Keep the bundle on the baking sheet, seam side down.

Repeat with remaining bacon strips and green beans.  Top with salt & pepper. You can put quite a few of these on the pan, but be careful to not let them touch.  It makes it more difficult to separate once cooked.  If desired, sprinkle with the brown sugar.

Bake in the preheated oven until browned and heated through, about 10-15 minutes.

I finished mine off in a pan of diced garlic and butter alongside other veggies to add a bit of flavor and to color the top of the bacon but this is not necessary (I just love garlic too much).

      Oh wow! Thank you so much for trying the recipes! It’s nice to see someone is actually trying them. The Stroganoff isn’t one of the best recipes but I am so, so, glad you at least enjoyed it!! Thanks for letting me know and I hope you enjoy this one too! I’ll have to make more Ramsay dishes so I know for sure you’ll like those ones 😉
