Teriyaki Beef and Vegetable Skillet Recipe

Cutting, chopping, and dicing vegetables has become one of my favorite parts of cooking lately. There’s something about the colors that seem to make the process even more therapeutic than usual. Perhaps this says more about me than it does the food, but whatever the case is, I’m not complaining.

As someone who is making a point of being more self-aware and who is trying to make mental health more of a priority, I’ve had several realizations. This is not to say that everything in life is magically amazing, but I’m focusing on the things that I can control. One of which, is what I cook and what I choose to eat to fuel my body.

I am attempting to lose some weight and figuring out what does and does not work for my body and mind. Therefore, I am beginning to make a point of adding healthier ingredients to most of the meals I make. Add the fact that I don’t have much experience with teriyaki, and ta-da! This teriyaki beef and vegetable skillet was made. I want to give credit to The Roasted Root for this recipe, and I look forward to trying more of Julia’s recipes!

Teriyaki Beef and Vegetable Skillet

Ingredients

  • 1 lb ground beef
  • 1/2 red bell pepper, cut into match sticks
  • 1 large carrot, chopped
  • 1 medium zucchini, chopped
  • 1 large crown broccoli, chopped (May be substituted for broccolini)
  • 1/4 cup teriyaki sauce (Homemade or store-bought)
  • 1/2 tsp sea salt, to taste
  • 1/2 of a yellow onion, finely chopped
  • 3 to 4 cloves of garlic, minced

Instructions

  1. Heat a large skillet to medium-high and place the ground beef in the center. Without breaking it, allow it to brown for 2 to 3 minutes. Flip to the other side and brown for an additional 2 to 3 minutes.
  2. Use a spatula to break the meat into smaller pieces.
  3. Add the chopped bell pepper and carrot to the skillet, stir, and cover with a lid. Allow the skillet to cook for 3 to 5 minutes while you chop the zucchini and broccoli.
  4. Transfer the zucchini and broccoli, stir and cover. Cook for 3 to 5 minutes, or until vegetables have reached the desired done-ness.
  5. Add the teriyaki sauce and allow the mixture to come to a full boil. Cook, stirring occasionally until the sauce has thickened.
  6. Add sea salt to taste if desired, and serve!
